Wholemeal Penne Pasta Organic Heathly Lunch Box Recipes

Wholemeal Penne Pasta with Organic Chicken ,
Basil Pesto and Semi dried Tomato

what you need:
1 x 500g wholemeal dried penne pasta
1 medium sized organic chicken breast
1 cup fresh *basil pesto
1 cup semi dried tomato (can substitute with a punnet of cherry   tomato, cut in halves)
50g piece of fresh parmesan cheese (for shavings)
1/2 cup fresh basil leaves

what to do:
Poach or Panfry Chicken with lid on
(Poach :Cook just covered with water, simmer with lid on for 15 minutes)
Remove from pan and allow to rest for 10 mins, whilst covered
Boil pasta until al dente, drain in colander, rinse with hot water
Cut chicken into thin slices
Combine warm pasta, chicken , basil pesto and semi dried tomato
Serve warm or cold as a salad with generous shavings of fresh parmesan and fresh basil leaves
Cracked pepper if desired
