what you need: 1 kg tomatoes (preferably organic) 1/4 cup feta cheese (persian feta or goats feta are my favourites) 1/4 cup fresh small basil leaves 1Tbs organic extra virgin olive oil 1Tbs Caramelised Balsamic
what to do: Cut your tomatoes anyway you choose depending on variety & size, try halves, quarters, thick slices Arrange in serving bowl Crumble feta cheese evenly over tomatoes, sprinkle with whole basil leaves. Drizzle with extra virgin olive oil & caramelised balsamic. Serve enjoy
