Steamed Asparagus with toasted Pine Nuts & Caramelised Balsamic Serves 4 what you need: 2 bunches organic asparagus 1/4 cup (50g) pine nuts, toasted juice of half a lemon 1 tsp Caramelised Balsamic 1 tsp Extra Virgin Olive Oil Parmesan Cheese shavings to garnish generous grind of black pepper to taste what you do: put 500ml of water in a large fry pan with lid & steamer basket or in a double saucepan steamer bring water to boil on high heat on stove trim the ends of asparagus as required once water is boiling, turn down to low heat place asparagus into steamer to steam for 5 minutes put small fry pan onto a low heat, and toast pine nuts until golden brown remove asparagus from steamer when tender, Serve asparagus on a platter with toasted Pine Nuts, Drizzled with lemon juice, Caramelised Balsamic & Extra Virgin Olive Oil, Parmesan shavings & cracked pepper as desired. enjoy
