Spicy Seafood Laksa Serves 6 what you need: 1-2 heaped tsp Laksa Dry Spice mix* (use 1 tsp for mild, 2 tsp medium heat) 2 Tbs peanut oil 1 onion roughly chopped 2 cloves garlic finely grated 1 small piece of ginger peeled & finely grated 1 red chilli, deseeded & finely chopped 500ml vegetable or fish or chicken stock 1 tsp fish sauce 1 red capsicum finely sliced 2 shallots roughly sliced 300g boneless white fish cut into small pieces 1/2 kg peeled & cleaned green prawns 1 400ml can coconut cream 1 bunch brocolini or med stalk of brocoli, cut into small pieces including stalks 200g snow peas 1 pkt organic fresh hokkein noodles 1/2 lime juiced 1/2 bunch coriander, finely chopped (saving a handful of leaves for garnish) 1 cup fresh bean sprouts 1/2 cup unsalted peanuts crushed
what to do: Place noodles in a bowl of boiling water for 5 mins. Drain Heat large pan or wok Add sesame oil, laksa spice mix, onion, garlic, ginger & chilli cook 2 mins Add stock, simmer 10 mins Add capsicum, shallots, fish pieces, fish sauce & coconut cream Simmer for a further 5 mins Add noodles, brocolini and snow peas, simmer 5 mins Add prawns, simmer & stir 1 min Serve in a large bowl noodles, seafood, vegetables & creamy sauce garnish with squeeze of lime juice, bean sprouts, crushed peanuts & coriander leaves. enjoy * For Spices see www.herbies.com.au
