Savoury Muffins Makes 12 what you need: 125g organic butter 3 organic eggs 3 cups wholemeal SR flour 1 tsp baking powder 1 tsp paprika 1 cup grated mozzarella cheese 1 spanish onion, finely diced 1 red capsicum, finely diced 2 shallots, finely sliced 1 zucchini, finely grated 1/2 cup fresh corn kernels handful of fresh herbs chopped (basil, flat leaf parsley, chives or oregano) 120g goats feta crumbled 1 cup organic full cream milk (can substitute with rice milk) 1/2 cup of *fresh tomato sauce (can substitute with 1 tsp tomato paste) oil for greasing or muffin wrappers to line 12 muffin tray
what to do: preheat convection oven to 200 deg C (fan forced oven 180 deg C) grease the muffin tray with oil, or line with muffin wrappers melt butter, allow to cool Combine flour, BP, paprika, grated cheese, onion, capsicum, shallots, zucchini, corn, herbs and feta in a seperate bowl, lightly beat eggs and milk, add fresh tomato sauce and cooled butter add wet ingredients to dry ingredients, combine to a moist batter spoon even amounts into 12 muffin tray bake for 30 minutes until golden brown serve warm enjoy Store in an air tight container in fridge *see recipe archive for fresh tomato sauce recipe
