Organic Lamb, Pine Nut & Mint Burgers Serves 8 what you need: 600g organic lamb mince 2 organic eggs 1 spanish onion, peeled & finely diced 1 cup of mint leaves, finely chopped handful of flat leaf (Italian/Continental) parsley, roughly chopped 1 tsp ground cumin 1 tsp sweet paprika 1/2 cup of rice crumbs 1/2 cup pine nuts, toasted generous grind of black pepper pinch of sea salt what you do: place pine nuts in a fry pan on a low heat and toast to a golden brown colour place all ingredients into a large bowl mix well until thoroughly combined divide mixture into eight even amounts with wet hands, roll each amount into a ball and then flatten to form a circular burger patty (rissole) about 2-3cm thick heat a 26cm fry pan to a high heat cook patties 3-4 at a time, 3-5 minutes each side to colour once all eight patties are done, place patties on a tray lined with baking paper finish in a moderate oven (160 deg C) for 5-10 minutes (time in oven depends on how thick your patties are, as well as how you like your lamb cooked) serve on a wholemeal roll or wholemeal turkish bread, with salad leaves, fresh beetroot & avocado, served with hummus. enjoy
