Organic Hummus Serves 12 what you need: 1 Tbs Extra Virgin Olive Oil 1 medium onion, peeled and finely diced 2 cloves garlic, peeled, crushed, finely grated or chopped 1 1/2 tsp of ground cumin 1 x 400g can of organic chick peas drained 1/2 cup (125ml) tahini 1/2 cup (125ml) lemon juice 1/4 Organic Extra Virgin Olive Oil (EVOO) 1/2 bunch coriander, roughly chopped 1 tsp ground paprika extra oil and ground paprika for presentation
what to do: Heat oil in small saucepan, add onion and garlic, cooking and stirring over low heat until soft and translucent add cumin, cook a further two minutes until fragrant, remove from heat to cool blend in a food processor, chick peas, tahini, lemon juice, Organic EVOO, coriander, paprika and onion, garlic and cumin mix, until smooth spoon onto a serving platter or bowl, drizzle with a little extra virgin olive oil sprinkle with ground paprika serve with raw vegetable sticks and wholemeal lavosh crackers or Lebanese bread pieces enjoy
