serves 8 what you need: 500g Organic Chicken thigh meat 1 litre of water 500ml chicken stock 1 large onion peeled and diced 2 cloves of garlic, peeled & finely grated or chopped 2 stalks of celery washed and finely sliced 2 corn cobs (peel husk and remove corn kernels from cob) 1 x 400g can cannellini beans drained and rinsed 1 x 440g can of creamed corn 2 shallots finely sliced what to do: place chicken thigh meat in a large pot and cover with 1 litre of water, bring to the boil with the lid on once boiling remove lid, turn down to simmer for 15 mins Remove chicken pieces from pot to rest on plate, cover plate with lid to avoid chicken meat drying out Add chicken stock, onion and garlic to the cooking liquor remaining in the pot Simmer to reduce this liquid for a further 30 minutes Finely chop chicken meat, add to soup Add creamed corn, cannellini beans, fresh corn kernels, finely sliced celery, simmer a further 10 minutes Serve hot with cracked black pepper & finely sliced shallot enjoy
