Organic Beef & Vegetable Rolls Healthy Organic recipes


  • Organic Beef & Vegetable Rolls

  • makes 48
    what you need:
    600g organic beef minced
    1 small onion peeled and finely diced
    1 cup of raw carrot peeled and finely grated
    1 cup of raw zucchini finely grated
    1/2 cup of raw potato peeled and finely grated
    1 clove of garlic peeled and finely grated
    handful of fresh basil leaves and parsley finely chopped
    2 organic eggs
    3 Tbs of organic tomato ketchup or 1 tsp of tomato paste
    1 tsp sweet paprika
    1/2 cup of rice crumbs or homemade bread crumbs
    freshly ground black pepper
    pinch of sea salt if desired
    4 sheets of ready made puff pastry
    (Pampas or Careme All butter puff)
    1/4 cup organic milk for glazing
  • what to do:
    pre heat fan forced oven to 200 deg C (if using a convection oven use same temperature, they may take longer to cook)
    Combine all ingredients (except pastry and milk) in a bowl or mixer until thoroughly combined
    To make rolls, cut each pastry sheet in half
    Measure the beef mixture into 8 x 180g batches
    using wet hands, roll each batch of beef mix into a long narrow sausage shape, place in the centre of each piece of pastry, fold the edges of the pastry to meet together,
    place each roll, seam side down, onto a sheet of baking paper on a baking tray 4 rolls per tray
    brush each roll with a little milk to glaze
    bake in a hot oven 200 deg C for 15-20 minutes
    until golden brown
    cut each roll into 6 pieces with a serrated knife
    Serve hot with a little tomato ketchup or spiced chutney
