Organic Beef & Bean Nachos Serves 6 what you need: Beef & bean mix: 500g organic beef mince 1 onion, peeled & finely diced 1 clove garlic, peeled & finely grated 2 large green chilli, deseeded & finely sliced (if you want even more kick leave the seeds in, or if you like it really hot use small red chilli with seeds in) 1 Tbs extra virgin olive oil 1 tsp cumin seeds 1 tsp coriander seeds 1/2 tsp cloves 1 tsp paprika 1 Tbs tomato paste 1 x 400g can of peeled, diced tomatoes 1 x 400g can of red kidney beans handful flat leaf parsley, finely chopped 250ml water Guacomole: 1 avocado ½ small Spanish onion, finely chopped 1 large tomato, deseeded, finely chopped 1 lemon juiced pinch of sea salt Ground black pepper To serve: 1 cup of organic mild tomato salsa (make your own or out of a jar!) 2 shallots to garnish, roughly chopped 1 bag (230g) organic corn chips what to do: Start by dry frying the cumin seeds, coriander seeds & cloves in a fry pan for five minutes, tossing frequently. Remove the spices and grind them up in a mortar & pestle or spice grinder. Now in the fry pan, warm oil, add onion, garlic & chilli cook for 5 minutes on high heat, stirring constantly. add the ground spices and paprika to the pan, cook for a further two minutes add beef mince and cook til browned add tomato paste, cook a further five minutes, stirring constantly add diced tomatoes, kidney beans, parsley & 250ml water Simmer for half an hour on low heat, stirring occasionally. To make Guacomole: combine avocado flesh & lemon juice in a bowl and mash with a fork, until smooth add finely diced onion and tomato, and season with pepper & salt To assemble nachos: you can do this two ways...either as one big platter to share or in individual bowls so everyone gets their own! on your plate/bowl or platter, start with a bed of corn chips next layer the beef & bean mix over the corn chips then the guacamole, then the salsa, then the shallots roughly chopped (sour cream can be added too after the guacamole layer, and grated cheese on top and grilled before adding the shallots if desired) enjoy A video on “how to” on you tube http://www.youtube.com/user/janecooks1#p/a/u/1/DYKApJxLN0s
