Minestrone Soup a highly nutritious soup that tastes great Serves 6 what you need: 50 ml extra virgin olive oil 1 large onion, peeled & diced 1 large carrot, peeled & diced 1 stick of celery, diced 2 cloves garlic, peeled & finely grated 2 tomatoes, deseeded & chopped 2 potatoes, peeled & diced 1 cup green cabbage, finely diced ½ cup raw Borlotti beans, pre soaked overnight & pre cooked 30 minutes or 1 x 440g can Borlotti beans, drained & rinsed ½ cup raw Cannellini beans, pre soaked overnight & pre cooked 30 minutes or 1 x 440g can Cannellini beans, drained & rinsed 1 x 400g can diced tomatoes 1 litre vegetable or chicken stock 2 bay leaves handful of flat leaf parsley, roughly chopped handful of fresh oregano or fresh thyme leaves 1 cup of green beans, diced or green peas (seasonal) to taste: Fresh parmesan cheese grated, cracked black pepper & extra virgin olive oil. what you do: In a large pot place 50ml Olive oil, on a medium heat saute onion, carrot & celery for five minutes Add garlic & fresh tomatoes, saute another five minutes, Add stock, canned tomatoes, potatoes, cooked or canned bean & bay leaves & fresh herbs Bring to the boil with lid on for five minutes Turn down to a simmer for a further twenty to thirty minutes, lid off, stirring occasionally Add cabbage & green beans or peas & herbs. Simmer a further 5 to 10 minutes, lid off Serve hot with freshly grated parmesan cheese, cracked black pepper, a drizzle of extra virgin olive oil and some crusty bread. enjoy
