Lentil, Coriander & Kumara (Sweet Potato) Patties. Serves 12 what you need: 150g red lentils 1 onion, peeled & finely diced 2 cloves garlic 1 tsp cumin 1 Tbs Extra Virgin Olive Oil 250 ml water 1 red chilli, deseeded & finely chopped (optional) 1 cup Kumara, (approx 1 large) peeled & thickly sliced, roasted and diced 1 cup cooked brown rice 1 cup brown rice flour 1 bunch coriander, stalks & leaves roughly chopped 6 shallots, white and greens, roughly sliced 2 eggs pinch of sea salt what you do: Soak lentils in a bowl covered with cold water for at least one hour Place peeled and slice kumara, roast in the oven with a little olive oil for 30 minutes at 180 deg C To cook lentils: (first drain off soaking water) In a pan put 1 Tbs Extra Virgin Olive Oil, cook onion, garlic & cumin for 2-3 minutes to soften, add lentils and 250ml of water. Bring to the boil, then turn down to a low heat to simmer, cook for approx 15 minutes, stirring occasionally. Allow to cool. In a large bowl combine lentil mix, roasted & diced kumara, cooked brown rice, shallots, coriander, chilli (optional), eggs, rice flour, sea salt mix until combined In a large fry pan, heated to a medium heat, place a little olive oil Using ¼ cup of mix per pattie, make patties and fry for 5 minutes on each side until golden brown.
