tomato sauce this is a basic sauce made with a surplus of tomatoes, you can even use half fresh / half tinned whole or diced peeled tomatoes, it takes no time to make & can be included in many recipes.
what you need: 1 kg ripe tomatoes, roughly diced 1 onion peeled, roughly diced 2 cloves of garlic peeled and roughly chopped 2 Tbs extra virgin olive oil Handful of fresh herbs (basil, oregano, majoram, parsley) what you do: 1.Place oil, onion, garlic & tomatoes into a medium size pot, cook on a medium heat for 5 - 10 minutes stirring often 2. Turn the heat down to low with the lid simmer for 20 - 30 minutes. Remove from heat and allow to cool slightly. 3. Place in a blender with the fresh herbs and season with sea salt, blend either to a chunky or smooth sauce as desired. This sauce has many uses, tossed through fresh pasta or gnocchi, as a base for bolognese, marinara, as a sauce base on pizzas or included in savoury muffins. This sauce will keep in the fridge for 3-5 days.
