Chicken Fried Rice Serves 6 what you need: 2 organic chicken breasts, sliced thinly 2 cloves garlic, peeled & finely grated 3 Tbs Sesame Oil or Extra Virgin Olive Oil 2 organic eggs 1 onion, peeled, halved, cut each half into six thick wedges 1 cup chopped celery 1 cup fresh green peas, shelled 3 cups cooked brown rice 4 shallots, finely sliced 1/2 bunch fresh coriander, roughly chopped 1 Tbs Tamari ( organic natural soy sauce) 1 lemon, cut into six wedges what you do: put sliced chicken meat, garlic & 2 Tbs sesame seed oil into a bowl, mix thoroughly in another bowl lightly beat the two eggs in a small fry pan, lightly cook the egg, into a thin pancake/omelette approx 2 minutes of each side on a low heat allow to cool, then slice thinly heat a large non stick fry pan or wok put the final 1 Tbs Sesame Seed Oil, onion, chicken, garlic & oil into the pan, cook on a high heat for 5 minutes add celery, green peas & rice, cook a further 5 minutes, stirring often add the shallots, coriander, sliced egg pancake and 1 Tbs Tamari, mix well fry for a further 5 minutes, stirring often serve hot with a wedge of lemon enjoy
