Carrot, beetroot & ginger salad with apples & almonds serves 6
what you need: 2 large carrots 2 bulbs of beetroot 1 tsp finely grated fresh ginger 1/2 cup of fresh orange juice 1/2 cup of almonds roughly ground 2 red apples (preferably fuji or gala) cored and finely sliced handful of fresh mint leaves
what to do: Peel and finely grate carrot & beetroot by hand or in a food processor Mix well with ginger & orange juice in a large bowl, allow to stand for 15mins for flavours to absorb Serve with sprinkled ground almonds, apples finely sliced & mint leaves. Serve immediately as apples will discolour & almonds will soften. enjoy
