what you need: 50 g unsalted butter 1/4 cup rapadura* sugar (substitute with 1/2 cup brown sugar) 2 eggs 1 tsp ground cinnamon 1 cup rolled oats 1 cup self raising wholemeal flour 2 large ripe bananas, peeled and broken into chunks 1/4 cup pure maple syrup 1 cup of fresh or frozen blueberries (substitute with raspberries, dates. apple pieces or dark chocolate chips) 1/4 cup rolled oats for sprinkling on top what to do: pre heat convection oven to 180 deg C (fan forced oven same temp, shorten cooking time) cream butter, sugar & cinnamon add eggs mix well add 1 cup rolled oats & 1 cup flour add chunks of banana & maple syrup gently combine Spoon even amount of mixture into each muffin case, adding whole blueberries as you go, sprinkle with remaining oats Bake in oven for approx 15 - 20 minutes depending on size, until golden brown.
