fruit base: what you need: 1 kg apples 1 small lemon juiced 1 cinnamon quill 1 litre water what to do: peel apples (if desired) then quarter, core & dice place in large pot cover with lemon juice, cinnamon quill, then approx 1 litre water until apple pieces are covered Cook on stovetop, bring to the boil and then simmer 20-30 minutes until apples soften, then leave to cool in juices
crumble mix: what you need: 1 cup rolled oats 1/2 cup desiccated coconut 1/4 cup LSA (linseed, sunflower seed, almond ground) 1/4 cup wheatgerm 1/4 cup rapadura or brown sugar 1 tsp cinnamon 25g butter softened
what to do: in a large bowl combine all crumble mix ingredients work the softened butter through the dry ingredients with finger tips until combined place cooled fruit and a portion of cooking juices in each small ramekin or one large dish, cover each with crumble mix evenly bake in mod oven 160 deg for 30 minutes on middle shelf taking care not to burn tops serve with natural yoghurt or double cream enjoy
